This morning, the city woke up covered in the most perfect mist, typical of this time of the year. In the early hours, millions of tiny droplets of water are suspended in the air, creating an almost magical world, allowing us to barely discern the leaves of the trees in the park and letting our imagination believe in the possibility of all sorts of fairytale characters, especially if we are lucky enough to have a little bit of silence in our hectic city.
A little while later it begins to drizzle, because it doesn’t really rain here, and very slowly and quietly the streets and sidewalks are covered with an almost dew-like moisture, making everything shiny and smooth. On a cool and humid day like this, I find that sitting by the window with a cup of very hot, strong and sweet tea, listening to the sounds of cars riding by on the wet streets, is an almost perfect pleasure. And to make this perfect pleasure even better, the cup of tea could be accompanied by piping hot scones… served with whipped cream and jam!! In case you ever want to make these scones, I’ll share my recipe with you:
SCONES
- 2 Cups flour
- 4 Teaspoons baking powder
- 5 Tablespoons butter
- 2/3 to ¾ cups of cold milk
- Pinch of salt
- Sift flour, salt and baking powder.
- Add butter and work with your fingers until the mix looks like fine crumbs
- Slowly add the milk until you have a soft dough that comes away from the sides of the bowl
- Place on a floured surface and press with your fingers until it is about 1 centimeter thick.
- Cut the scones with a round cookie cutter
- Bake at a 400º oven for about 12 to 15 minutes
Serve hot, straight out of the oven!!!
